Cooking & Camping Tybee Island
We went camping to Tybee Island for Spring Break with the kids. We went for 8 whole nights. So that is a lot of food to plan for. I have 3 boys and we are putting up a 20 year old pop up camper. So when we I am looking to make food, I like it be a easy as possible. We decided to bring our pressure cooker with us. I am so happy we need. It definitely came in handy.
I was able to make chicken tacos, chicken BBQ, baked potatoes, and brats. These were all easy dishes to put together and not have to think about.
1. Shredded BBQ Chicken Sandwiches:
The chicken was going to be grilled the first night, but we ran out of time. So I threw 3 chicken breasts and BBQ with some BBQ seasoning we had pre-made into the pressure cooker. I was able to heat up make a quick meal in less than 20 minutes while still setting up camp.
2. Baked Potatoes & Green Beans
Second night, we made steaks on the grill. I made bake potatoes and green beans in foil packages. Yes, I know you can grill those but, we have a small grill.
3. Brats
3rd night, browned, and cooked brats in the pressure cooker since we needed to get propane.
4. Chicken Tacos
4th night, sister was there with her son. We made chicken tacos. Through all the traditional tacos seasonings with some taco sauce for liquid. Set the manual mode for 14 minutes. When it was done, we had plenty of meat to feed 5 boys, my sister and I.
Can't forget about dessert....
Banana Boats:
-
Banana
-
Foil
-
Chocolate Chips
-
Mini Marshmallows

Caramels
Put everything in the Foil, cut a line down the middle of the banana and heat on the fire for a few minutes.
